Well, I have to admit-I didn’t.
I have heard of pecan pies, but can honestly say…I have never tried one. If you have read previous articles I have submitted, you probably understand why I haven’t tried a pecan. That would be something I would have to “try” and no way am I one for trying new foods. (Trust me; the facial expressions are enough to make a grown man cry!)
Pecans are available in many forms; you'll find them vacuum-packed in jars, sealed in plastic bags, or packed in cans. For the freshest and most flavorful pecans, choose whole ones in the shell; look for nuts that are heavy for their size and don't rattle when shaken. There shouldn't be any cracks or holes in the shells. When you buy shelled pecans in bags or cans, look for an expiration date. Shelled pecans absorb odors and turn rancid quickly, and should be stored in the refrigerator in a sealed container. Pecans also freeze very well, so if you buy more than you can use right away, store them in a moisture-proof plastic bag in the freezer. Unshelled pecans can be stored for about 3 months at room temperature.
Pecans are most popular in desserts such as pies, cookies, and candies, but also make an interesting addition to salads, stuffing, chicken or fish coating, and other savory main or side dishes. They are also delicious whole, toasted and spiced, or covered with chocolate.
Even though pecans have a high fat content, they're a good source of potassium, thiamine, zinc, copper, magnesium, phosphorous, niacin, folic acid, iron, and vitamin B6, and also a good source of fiber. The fats are composed of 87% unsaturated fatty acids (62% monosaturated and 25% polyunsaturated).
I am able to tell you that a lot of my family members love pecans so it was easy to get recipes by just asking them their favorites. Hopefully one of these recipes could be your favorite as well.

Pecan Snacks
Ingredients:
1 egg white
1 tablespoon water
1 pound pecans
3/4 cup white sugar
1 teaspoon ground cinnamon
1 teaspoon salt
Directions:
Preheat oven to 250 degrees F (120 degrees C)
In a large bowl, beat egg white with water until frothy. Stir in pecans and mix to coat. Combine sugar, cinnamon and salt and stir into pecan mixture. Spread on a baking sheet.
Bake in preheated oven 1 hour, stirring every 15 minutes. Store in an airtight container.
Frosted Pecan Bites
Ingredients:
1 pound pecan halves
1 cup white sugar
salt to taste
2 egg whites, stiffly beaten
1/2 cup butter
Directions:
Preheat oven to 275 degrees F (135 degrees C).
Toast pecans for 10 to 15 minutes or until lightly toasted. Set aside to cool.
Fold sugar, salt and pecans into egg whites.
Increase oven temperature to 325 degrees F (165 degrees C). Melt butter or margarine on a sheet pan.
Spread the nut mixture over pan and bake for 30 minutes, stirring every 10 minutes. Remove from oven and allow to cool.
Yummy Pecan Bites
Ingredients:
1 cup shortening
1 1/2 cups sugar
2 eggs
2 3/4 cups all-purpose flour
2 teaspoons cream of tartar
1 teaspoon baking soda
1/4 teaspoon salt
1 cup finely chopped pecans
TOPPING:
3 tablespoons sugar
1 1/2 teaspoons ground cinnamon
Directions:
In a mixing bowl, cream shortening and sugar. Add eggs, one at a time, beating well after each addition.
Combine the flour, cream of tartar, baking soda and salt; gradually add to creamed mixture. Stir in pecans.
Combine topping ingredients in a small bowl.
Roll dough into 1-in. balls, then roll in topping.
Place 2 in. apart on ungreased baking sheets; flatten slightly.
Bake at 400 degrees F for 10-12 minutes or until surface cracks.
Remove to wire racks to cool
Pecan Icebox Cookies
Ingredients:
1 cup butter or margarine, softened
1 cup sugar
1 cup packed brown sugar
3 eggs
4 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon salt
1 cup chopped pecans
Directions:
In a mixing bowl, cream butter and sugars. Add the eggs, one at time, beating well after each addition.
Combine flour, baking powder, baking soda, cinnamon and salt; gradually add to the creamed mixture. Stir in pecans.
Shape into four 6-1/2-in. rolls; wrap each in plastic wrap.
Refrigerate overnight.
Unwrap and cut into 1/8-in. slices. Place 1 in. apart on ungreased baking sheets.
Bake at 375 degrees F for 7-10 minutes or until lightly browned. Remove to wire racks to cool.
Chocolate Chip Icebox Cookies
Ingredients:
3 tablespoons butter (no substitutes), softened
2 tablespoons shortening
1/4 cup sugar
1/4 cup packed brown sugar
1 egg yolk
1/2 teaspoon vanilla extract
2/3 cup all-purpose flour
1/4 teaspoon baking soda
1/4 teaspoon salt
1/4 cup miniature semisweet chocolate chips
1/4 cup finely chopped pecans
Directions:
In a small mixing bowl, cream the butter, shortening and sugars. Beat in egg yolk and vanilla; mix well.
Combine the flour, baking soda and salt; gradually add to creamed mixture and mix well. Stir in chips and pecans. Shape into a 9-in. roll; wrap in plastic wrap. Refrigerate overnight.
Unwrap and cut into 1/4-in. slices. Place 2 in. apart on ungreased baking sheets.
Bake at 375 degrees F for 8-10 minutes or until edges are golden brown. Cool for 2 minutes before removing to wire racks to cool completely.
Pecan Crackers
Ingredients:
1/2 (16 ounce) package graham crackers
2 cups chopped pecans
1/2 cup white sugar
1/2 cup butter
1/2 cup margarine
Directions:
Preheat oven to 350 degrees F (175 degrees C).
Line a baking sheet with graham crackers. Sprinkle evenly with pecans.
In a small saucepan over medium heat, combine sugar, butter and margarine. Bring to a boil and boil 3 minutes. Remove from heat and spoon mixture over pecans, coating well.
Bake in preheated oven 12 minutes, until golden. Cool completely before serving.
Pecan Butter Balls
Ingredients:
2 cups all-purpose flour
1/4 cup white sugar
1/2 teaspoon vanilla extract
1 cup margarine
2 cups chopped pecans
1/3 cup confectioners' sugar for decoration
Directions:
Sift together into a medium sized bowl the flour, sugar and vanilla. Work in the margarine with a spoon or hands until well blended. Add chopped pecans and mix well.
Shape dough into 1 inch balls and put on ungreased pans.
Bake in a preheated 325 degree F (165 degrees C) oven for about 25 minutes or until pale brown. When slightly cool roll or shake in confectioners' sugar. Store in an air tight container.
